πΉ️2 medium potatoes, diced
πΉ️3 cloves garlic, minced
πΉ️1 celery stalk, chopped
πΉ️1 tbsp tomato paste
πΉ️3 tbsp Worcestershire sauce
πΉ️2 cups Guinness beer
πΉ️1 cup beef broth
πΉ️1 tsp dried rosemary
πΉ️1 tsp dried thyme
πΉ️2 bay leaves
πΉ️1 tbsp olive oil
πΉ️1 tbsp cornstarch
πΉ️Fresh thyme for garnish

↪️1. Heat olive oil in a skillet. Toss beef with cornstarch, then brown for about 5 minutes. Set aside.
↪️2. In the same pan, cook the bacon until crispy, then set aside with the beef.
↪️3. Add all the veggies, herbs, Guinness, beef broth, Worcestershire sauce, and tomato paste into the slow cooker.
↪️4. Stir in the browned beef and bacon. Cover and cook on LOW for 8 hours.
